It’s been forever since I’ve had a Tasty Tuesday treat to share! This is mainly due to the fact that I’ve been less than creative and have been making nothing but old standbys lately. I’ve also been so tied up with Delaney, who always wants to eat right when I should be making dinner, that I haven’t been able to experiment with recipes.
In all honesty, the only reason I successfully tried something new tonight was that I had the ingredients on hand and had literally nothing else to make for dinner. Believe me, if we would have had an unopened can of sauce, we totally would have been eating spaghetti. But it worked out and this is definitely a dish I will add to my repertoire. It is also a great dish for entertaining and super easy, so my attention was only turned from the kids for a few minutes to prepare. This was the first time I have made Salmon and I was impressed by how easy it really was!
Ingredients:
- Salmon filets
- Tomato
- Fresh Basil (I used dried and it was just fine!)
- EVOO
- Parmesan cheese
Directions:
- Pre-heat oven to 375
- Place a sheet of Aluminum foil on baking tray and spray with non-stick cooking spray
- Place Salmon on tray and top with tomato
- Sprinkle basil over top and then drizzle the EVOO over the fish
- Sprinkle a small amount of cheese on top of the tomato
- Bake for 15 minutes
That’s it. Super easy and delicious, not to mention decently healthy as well. I served our fish with a side of fresh zucchini and squash that I cut up, drizzled with EVOO and Mrs. Dash and threw in foil in the oven with the fish along with a side of rice.
