I love quiche and I never realized that is it seriously the EASIEST thing in the world to make! Look out family, we are going to be having a lot of quiche in our house coming up! This quiche is part of a cooking frenzy that I went on this weekend, including chicken noodle soup, spaghetti and stir fry.
Without further delay, here is the recipe:
Time needed: 45 minutes, 10 minutes prep and 35 cooking time
Ingredients:
1/4 cup butter (I only used a tea spoon full of butter to cut some calories)
3/4 cup sliced mushrooms
3/4 cup chopped spinach
1 cup milk
3 eggs
1 cup grated cheddar cheese
1/4 teaspoon thyme
1/4 teaspoon pepper
1/4 teaspoon sale
1 9-inch pie shell
DIRECTIONS:
1. Preheat oven to 325 degrees
2. Saute mushrooms and spinach in butter
3. Beat together milk, eggs and cheese and then add spices
4. Fold in the spinach and mushroom mixture
5. Pour into pie shell (already spread out in your pie pan according to package instructions)
6. Bake for 35 minues
7. ENJOY!
In all seriousness, this quiche was amazing! I used a package of frozen chopped spinach from Green Giant and the only thing I may do a little different is to not use the whole package. It was a little spinach heavy, but still delicious!
And to think I never thought I would use that pie pan I got for my bridal shower three years ago! And since I have a whole other pie shell to use, I think I will try broccoli next! Stay tuned!
