There’s a lot of change going on in the Taylor house right now. I took a new job which allows me to work from home so I am finishing up at my old job, heading off on a magical vacation and then settling in to a new routine.
What does that mean for you, my dear blog readers? It means more Tasty Tuesday Treats! Since I will be at home I am able to be more creative in my cooking (look especially for lots of crock pot goodness!)
In the spirit of trying new things, Kevin and I really were longing for a date night. Since babysitters are scarce and money is tight, we opted for a stay-at-home date. We are sick of take out, cook outs and the usual throw-together dinner so I pulled out the cookbooks and looked for something special! We opted for Shrimp Scampi for a few reasons. First, it is a little “nicer” than our usual dinners. Second, Lily could eat the pasta, and lastly, it was something we only get at restaurants but we both love.
I will admit I almost fainted when I spent $25 at the grocery store on a bag of shrimp. I mean, really, $25 is out of control! Good thing the bag is pretty big and will make a few meals! So, without further adieu, the recipe for our amazing Shrimp Scampi!
Ingredients:
1 pound large shrimp (I prefer shell off)
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon minced garlic
1/2 cup white wine
2 tablespoons parsley, finely chopped if using fresh
1 tablespoon lemon juice (I squeezed 1/2 of a fresh lemon instead)
Instructions:
Over medium heat, add butter and olive oil to a saute pan. Once the butter foams up and starts to subside, add the garlic and saute for a minute or until the garlic starts to brown
Add the shrimp to pan. (If using frozen shrimp like I did, make sure you thaw the safe way in a bowl of cold ice water)
Add the white wine and stir, making sure to coat each piece of shrimp. Let the wine boil for 2-3 minutes
Toss the shrimp in the sauce until shrimp is nice and pink. Add the lemon juice and toss again
Remove from heat and serve
It’s seriously that easy! It was quicker than most of my throw-together meals and tastes 100 times better!
I chose to serve our dinner over pasta since we don’t eat it often and it was a treat. Other options could be over rice or served with a nice crusted bread. It would also be a good alone as part of a surf-and-turf meal with steak.
Anyway you decide, it turned out great and will definitely make occasional appearances in our meal plans!
