So it is 6 days in to the new year (and 3 months today since Lily was born!!) This is around the time where I usually start to lose momentum on my new years resolutions. This year I feel like I am still going strong! I’m not sure if this is because I am still excited about the changes I want to make or if it is because it has just worked out so far.
One of my resolutions was to eat at home 300 days of the year. We have modified this just a little bit by saying that if we are using a gift card that we have received as a gift (not one we bought ourselves for the gas points!) then this is a free meal, and does not count toward one of our eating out excursions, UNLESS we have to spend additional money (more then $5) above and beyond our gift card, then it counts!
We were able to get take out to the Olive Garden the other night, using a gift card, and we shared a meal, an appetizer and a salad. Let me tell you, this was more than enough food for the two of us and because we used a gift card and none of our own money, it didn’t count!
Because of this new goal to cook at home, it is also a new goal of mine to try new recipes so we aren’t constantly getting sick of the old ones! Truthfully, I am almost already sick of them! Last night I put my cooking skills to use and decided to make a whole chicken! I was able to pick up a small whole chicken for $4 at the grocery store and it provided enough chicken for us to eat and to make another meal with. I had never cooked a whole bird before so I googled how to do it and I must say it turned out pretty good!
I washed him really well and then seasoned him with Mrs. Dash Original and salt and pepper. I stuck some foil over him so that his wings and legs didn’t burn and shoved him in the over for an hour and a half at 350. This is what I got:
He turned out pretty well. I would have liked for his skin to be crispier so I am going to have to tweak how I cook them in the future, but overall, he was good. He pretty much just fell off the bone, which is great as I am able to use the tender white meat in my salad for lunch tomorrow at work (resolution #2 eat healthier!) Although this isn’t the healthiest meal as I paired it with stuffing, mashed potatoes and gravy and green beans, it was a very balanced meal that we all enjoyed.
I think I may start to like this cooking thing!!!
